Wellspent founder Jim Dixon has always loved to eat—and think, and write, and obsess—about good food.

Back in the day, he was a restaurant reviewer, charting the highs and lows of Portland dining with the fervor of a convert (he grew up in the relatively food-starved environs of southern Oregon, after all). That fanatical love of quality ingredients led him to start importing olive oil directly from Italy for his chef friends, and somewhere along the way, accidentally, Wellspent Market was born.
