100% Grenache Blanc and aged for 18 months in glass demijohns before transfer to the cellar for another 10 years (!) in wood, this unusual oxidative style of wine is known as rancio sec, and has been popular in and around the Pyrenees for centuries. Intentionally exposed to air and light during the ageing process, rancios achieve their higher ABV purely through an evaporative process (unlike the better-know sherry, which is fortified with spirits). Dark and earthy, with hints of mushroom and umami, Tresmontaine ‘Tabacal’ is an exceptional example of this historic style. We like it after dinner, alongside salty nuts and aged cheese for an elegant dessert.
