100% Macabeo and aged for a minimum of 4 years, this unusual oxidative style of wine is known as rancio sec, which have been popular in and around the Pyrenees for centuries. Intentionally exposed to air and light during the ageing process, rancios achieve their higher ABV purely through an evaporative process (unlike the better-know sherry, which is fortified with spirits). The wine maintains the light and waxy characteristics of Macabeo alongside the nutty, high-acid notes typical of rancios. This lighter style makes Le Demon de Midi a great substitute for fino sherry in cocktails, or as an aperitif to accompany cheese, nuts, anchovies and ham.
