Chitarra, meaning "guitar" in Italian, is essentially spaghetti that has been cut rather than extruded, giving it its signature squared-off shape and unique texture. Founded by Massimo Mancini on the farm his grandfather established in 1938, Mancini Pastificio Agricolo makes exceptional dried pasta exclusively with the durum wheat that it grows and harvests itself in the fields surrounding its pasta factory in the heart of Italy's Le Marche region. Made with traditional bronze dies, every step of the process from seed to packaging is meticulously managed by the Mancini family to ensure the highest quality.
