When chef Bonnie Morales opened Kachka in 2014, it soon became one of Portland's most beloved spots, quickly earning accolades for its "Russian drinking food," house-infused vodkas, and cheeky interior inspired by Belarussian country homes. The house-made dumplings, called Vareniki, have been on the menu since day one, and have become one of Kachka's signature dishes. Lucky for us, they're now available to enjoy at home. Simply filled with tart cherries, these cook fast, and traditionally they are boiled and served with a splash of vinegar and a dollop of sour cream. But they really shine as a dessert, and after they've boiled, we like to pan fry and serve them in a pool of cream for a decadent treat.
