Decaf coffee is rarely given much thought, often processed with industrial solvents, and generally considered not worthy of the attention paid to serious coffee. Dear Francis takes a different approach, and in fact pays extra attention to this often-maligned segment of the coffee biz. When partner Lauren Alameda-Reddell had to quit caffeine for health reasons, roaster Jason Wahlberg took it upon himself to create the best decaf he could, exclusively working with coffees decaffeinated through the labor-intensive but chemical-free Mountain Water Process. The result is Midnight Special, a serious–and seriously good–coffee, period.
