This aged goat wheel is a double rind cheese with a layer of ash covered with the edible white mold. It also has a layer of ash running through the center, which is reminiscent of the early morning fog found in the area for which the cheese is named. On the cheeseboard, Humboldt Fog makes a stunning presentation, with a stark white rind and interior, contrasted by layers of ash.
