Made in Portland using a small batch process developed over the years by generations of the Choi family, this kimchi literally bursts with flavor (really, it’s still alive and may bubble a little). A favorite midnight snack of ours, these crunchy radishes fermented with cabbage and chilies go a long way in jazzing up leftover rice, and work great as an easy side for a number of dishes. Choi’s kimchis do not contain fish sauce or any other seafood products.
