Dry-aged salmon! Salmon poke! Salmon sausages!? This is a pop-up you don’t want to miss: Aji Fish Butchery–AKA chef Jeff Kim’s project dedicated to Japanese-style dry aged salmon–returns to Wellspent for an afternoon of mind-blowing bites unlike any you’ve encountered before. There will be dry-aged salmon filets alongside made-to-order “salmon dogs” (served on shokupan with Kewpie mayo🤯) and deeply flavorful poke, dished up “local-style” without rice (to better highlight the incredibly nuanced flavors of the salmon). With concentrated flavors and a melt-in-your-mouth texture, Chef Jeff Kim’s dry-aged salmon offers Portland a new way to think about (and eat!) the PNW’s favorite fish. See you there!
