We love this pasta for its sauce-grabbing shape! The semolina wheat used to make this pasta, including the Senatore Capelli variety which is renowned for cooking to al-dente and giving the pasta its characteristic  golden color, is some of the best in Italy. Bronze cut pasta molds create a rough and porous texture ideal for holding sauce, and the low temperature drying method known as cirillo preserves the distinct texture and aroma.
