The selected semolina wheat Gentile uses to make their casarecce, including the Senatore Capelli variety which is renowned for cooking to al-dente and giving the pasta its characteristic golden color, is some of the best in Italy. Bronze cut pasta molds create a rough and porous texture ideal for holding sauce, and the low temperature drying method known as cirillo preserves the distinct texture and aroma. One of our favorite shapes, casarecce is ideally suited to saucy dishes.
