Jorinji handcrafts traditional, unpasteurized miso in Portland using 1300 year old techniques, non-GMO soybeans, sea salt, and housemade koji. Fermented from 12 to 18 months, red miso develops a stronger flavor and more umami. It’s great with hearty, robust dishes and makes great soup.
