Founders Yiyi Mendoza and Adam Elabd craft ethereal vingegars, kombuchas and other probiotic tonics in a converted church in upstate New York. Trained herbalists with backgrounds in organic medicinal plant farming, the duo pay special attention to sourcing, working with foraged, ceremonial grade, single-origin teas and plants to craft their beverages. Yaupon, a cousin of Yerba Mate, is the only plant native to North America that contains caffeine, and Yesfolk uses sustainable wild-harvested Yaupon from Texas. Earthy and lucious with notes of wild cucumber, mint and apple, and with an unusually restrained acid profile, it's aged in oak barrels crafted by master coopers in the Adirondacks before being canned.
