Founders Yiyi Mendoza and Adam Elabd craft ethereal vingegars, kombuchas and other probiotic tonics in a converted church in upstate New York. Trained herbalists with backgrounds in organic medicinal plant farming, the duo pay special attention to sourcing, working with foraged, ceremonial grade, single-origin teas and plants to craft their beverages. Their Jasmine Kombucha Vinegar is fermented in custom oak barrels made by master coopers in the Adirondacks, and its nuanced flavor profile works as well in the glass as it does on the plate. Floral and crisp with notes of blueberries and lemon, this delicate, bright vinegar makes for a lovely NA spritz, and will enliven any dish it encounters.
