Organic Lentils

More than 20 years a group of farmers in western Sicily formed the coop called Valdibella to grow the island’s traditional crops as well as providing work for the area’s young people. Like our French-style green lentils and  Pardina brown lentils, Sicilian lentils remain whole during cooking since they haven’t had their seed hulls removed. They’re delicious by themselves, cooked with just olive oil, garlic, celery, and salt, but they’re also good with pasta or in salads.
