The sisters Bronca, Antonella and Ersiliana, who inherited their love of winemaking from their father and their work ethic from their grandfather, grow their own fruit in steep hillside vineyards, controlling the entire process themselves in an effort to produce singular Proseccos that truly reflect their terroir. Most Prosecco is made in pressurised tanks before being clarified until it’s crystal-clear. Difetto Perfetto, however, is briefly fermented in tanks before being filled into bottles, where it undergoes a second fermentation much like Champagne. The lees are left in the bottom of the bottle (a style called ‘Col Fondo’ meaning ‘with the bottom’) where they impart spicy and toasty notes, plus a creamy texture. Atypically for Prosecco, those lees are left in the bottle resulting in a hazy wine; gently inverting it will enhance the buttery and spicy flavours and cloudy appearance. Try this: pour off a glass without disturbing the lees and enjoy a bright aperitif. Then, when dinner’s ready, slowly swirl the bottle to kick up the lees, and enjoy a fuller, richer wine with your meal.
