Part of the Rancho Gordo-Xoxoc Project, these delicious black beans are the result of two companies working together to help small farmers continue to grow their indigenous beans in Mexico, despite international trade policies that seem to discourage genetic diversity and local food traditions. Grown using centuries-old methods, these beans are best simple cooked in a clay pot. After they’re finished, enjoy with a good drizzle of olive oil and flor de dal, or make them into refried beans perfect for smearing on a tostada.
