Pondicherry Red Peppercorns

Named for the historic port once called Pondicherry (now Puducherry), these red peppercorns are harvested after ripening and have a sweeter flavor than black or green pepper. Grind coarsely to highlight the color. They’re especially good with foods containing lime and ginger.
