Giarraffa Black Olives

While the Greeks brought olives to Sicily more than 5000 years ago, the cultivar called Giarraffa is an ancient, native variety. Fat and meaty with a mild flavor, these are called ‘black’ because they are picked ripe, but the color is more khaki-green. The pit separates from the meat easily, making Giarraffas perfect for snacking or an antipasto platter.
