Castelvetrano Olives

The hill town of Castelvetrano in the Belice Valley developed the unique curing process that produces these sweet, buttery olives. Nocellara del Belice olives are picked while bright green, then washed in water mixed with lye to remove the bitter compounds. A fresh water soak removes the lye, and the olives are packed in a mild brine to preserve their vibrant color.
