Based on the island of Sardinia, the Locatelli family has been hand making sheep's milk cheeses for over 200 years. They even harvest and evaporate their own salt from the Mediterranean Sea! Unlike regular ricotta, ricotta salata is made with the whey from the cheese making process instead of the curds. It is pressed and aged for three months making a bright dry cheese with a firm slightly creamy texture and and a fresh briny salty flavor that is ideal for grating. Made with high quality sheep's milk whey, it's considered a healthier cheese for being high in protein, loaded with essential nutrients and having a lower fat content.
