When chef Bonnie Morales opened Kachka in 2014, it soon became one of Portland's most beloved spots, quickly earning accolades for its "Russian drinking food," house-infused vodkas, and cheeky interior inspired by Belarussian country homes. The house-made dumplings, called Vareniki, have been on the menu since day one, and have become one of Kachka's signature dishes. Lucky for us, they're now available to enjoy at home. Filled with a tangy farmer's cheese called Tvorog, these cook fast and are best enjoyed simply, dressed with a little vinegar, sour cream, and any chopped fresh herbs you have on hand.
