When asked how he makes his wines, Jean Michel Morel of Kabaj responded: "Who cares? Do you like the wine?" Not what you might expect from a guy who grew up in Bordeaux and now makes wine in a 600 year old monastery in Georgia. But we get the sentiment, as our own motto, with wine or anything else, is: first, it must be refreshing! And refreshing it is: organic Pinot Noir spends a few days macerating on its skin, giving this noble grape freshness with a surprising density. Ripe apple flavors stretch into a long, crisp, and mineral finish. Very elegant and refined and would be welcome at the table of most white Burgundy lovers. We definitely like the wine.
