While the Greeks brought olives to Sicily more than 5000 years ago, the cultivar called Giarraffa is an ancient, native variety. Green olives are picked early, before they begin to ripen and turn dark. Each fruit is cracked to allow the curing brine to penetrate and remove the bitter compounds more quickly. These are pale green, crisp and meaty, with a distinctive olive flavor.
