Piquette
Produced by Fossil & FawnPortland - OregonA “wine-adjacent” beverage, Piquette is made from rehydrating the pomace (skins, stems, and seeds) from freshly-pressed grapes, then allowing that to ferment into a light, fizzy, lower-alcohol (7% abv) pre-made spritzer-type thing. Kinda like hot dogs, you take what would have been relatively unusable leftover scraps and make it into something undeniably delicious and fun. Fossil & Fawn's Piquette is made from the pressings of their signature, all-carbonic Do Nothing, a blend of Pinot Gris, Pinot Noir, Gewurztraminer and Gruner Vetliner. This is some pretty active juice, and we recommend getting it well-chilled before opening in the sink... and have a glass ready!
