Vincenzo Rapio, his wife Kity and their sons Michele and Francesco grow and process several varieties of rice and corn in their own fields in the Piedmontese lowlands. Committed environmental stewards, they eschew the use of pesticides, use only natural fertilizers and rely on the abundant rivers and streams that flow down from the Alps to the Po River for irrigation. Bellgrano, the variety of corn used for their polentas, has a deep yellow color and is ground finely, yielding a smooth, creamy, and absolutely delicious polenta.
