One of the modern heroes working to restore Lambrusco’s reputation, Denny Bini works strictly in the old-school way, every year turning a mere single hectare of various Lambrusco grapes into 6000 bottles of dark, brambly juice of the old country. A combination of Marani, Salamino, Maestri, Gasparossa, and Ancellota varieties—vinified with indigenous yeasts and fermented in the bottle—it is full of dusty tannins, dark berry flavors and vibrant acidity, making it the perfect partner for pizza, bolognese, lasagna, and any other rich, meaty, tomatoey dish. One of our absolute favorites, year after year.
