Harvested and sorted by hand and dried naturally, these whole blossoms of oregano come from a small organic farm on an island in the Aegean Sea. The Origanum onites varietal has prospered in the region as long as anyone can remember, but it's no longer widely cultivated, and today only a handful of farmers still produce it. Tingly, herbaceous and refreshing, the locals typically use it to marinate lamb or chicken, but it's a great finishing oregano as well, ideal for dressings, sauces, grilled meats, bruschettas, and creamy cheese. These are whole blossoms; crush with your fingers before using.
