Farmers in North Vietnam grow heirloom varieties of hardneck garlic with hints of purple on their papery skins to make this garlic powder. It’s got much more flavor than the industrial versions found in grocery stores, so use sparingly to add flavor. It’s great as part of rub for grilled or roasted pork.
