Aromatic local Malvasia di Candia is gently pressed before seeing 5 days of skin contact; the wine is then bottled and left to ferment in the bottle, pet-nat style. The old-timers would call this bolle macerato, literally macerated bubbles, and the limestone and alkali soils lend a rustic minerality to this dry, refreshing, easy drinker.
