Justin Gill called his grandmother bachan, shorthand for the affectionate Japanese obachan or little aunty, and she taught him how to make this teriyaki-like sauce. Bachan’s uses the sweet rice wine called mirin and soy sauce, both from Japan, with fresh ginger and green onions to make a slightly sweet, umami-rich sauce that’s good on almost anything. Brush it on grilled chicken or salmon, drizzle over vegetables, or add some to simple bowl of rice.
